After 10 days break here Iam with the new post.. 2 weeks back,school declared holidays to Mahas Boys so,hooked with them these days and totally fixed in kitchen most of the day routine..Also,I have tried some recipes in this vacation so all the recipes going to post in january maximum..Coming to this post, it is a sambar recipe which is prepared in hotel style..
Sambar is one of the popular south indian authentic dish which cooked with toor dal,tamarind juice and lots of mixed vegetables.I have already posted basic sambar recipe and coocnut milk sambar recipe long time back in blog but this sambar is totally different with those recipes and tastes  delicious.The particular ground masala mixture gives a nice aroma to the sambar..If you prefer lentils in daily menu do give a try to this version sambar and share your results..

WHAT YOU NEED
Toor dal/kandi pappu-1 cup
Tamarind-lemon size ball
Onion-1 small
Tomato-1 big
Potato-1 big
Carrot-1 big
Brinjal | Eggplant-1 medium size
Salt-to taste
Red chili powder-2 tea spoons
Jaggery piece-1 table spoon

For Masala
coconut pieces-1/8 cup 
cloves-4
green cardamom-2
red chili-5
coriander seeds-1 table spoon
curry leaves-few
chana dal-1 table spoon
mustard seeds-1 tea spoon
hing/asafoetida-1/4 tea spoon
garlic cloves-3-4
fenugreek seeds-1/2 tea spoon
HOW TO COOK
Take all the ingredients which given under masala in mixy jar..Add chopped tomatoes and grind into fine paste. Soak dal for haf an hour and pressure cook for 3 whistles by adding turmeric powder,little bit salt and oil.Soak tamarind for 15 minutes and squeeze out juice and keep ready..Now heat a vessel with oil, add cumin, mustard seeds.Add chopped onions,,GGP and saute for 2 minutes..Then add all the veggies,add salt and cook for 5 minutes in medium flame..Add red chili powder,and mix once..Now add tamarind juice,cooked dal and mix well..Now add 2 cups of water,jaggery piece,ground paste and cook for 10 minutes in low flame..Then turn off by adding coriander leaves..Serve hot with rice and any veggie fry.
