Sambar is south Indian popular lentil stew which serves along with hot white rice. There are few varieties in sambar dishes and this is one of the common variety we cook in day to day life.
brinjal dishes are quite famous in our telugu people`s cuisine and this recipe also comes in that category.I have tried okra pulusu long time back, which looks similar to this dish but the difference is addition of sambar powder.It`s quite easy to make and perfect to serve with rice. WHAT YOU NEED
oil-1 table spoon
red chili-
cumin seeds-1 tea spoon
mustard seeds-1 tea spoon
curry leaves-few
onions-1 small
brinjal/egg plant/ vankaya-1 big
tomato-1 small
salt -to taste
red chili powder-1 tea spoon
turmeric powder-1/2 tea spoon 
coconut powder-1 table spoon
tamarind juice-1 cup
water -1 cup
sambar powder-1 tea spoon
coriander powder -1 tea spoon
HOW TO COOK
Heat a pan with oil,throw in red chili,cumin seeds,mustard seeds,curry leaves.Then add chopped onions and saute for 2 minutes..

Add chopped brinjal pieces,chopped tomato,salt and cook for a minute.Add in red chili powder, turmeric powder stir gently,cook for 2 minutes. 

Add coconut powder,tamarind juice,water and mix well. Cook for 5 minutes in medium flame. Add sambar powder,coriander powder and cook for 5 more minutes,turn off.Serve hot with rice.
