Lemon Sponge Cake Recipe | Light and Fluffy Lemon Cake | Easy Fluffy Lemon Cake | Simple Lemon Cake Without Butter


I rarely do Citrus fruit baking because no one is a big fan of them at home,including me. But the smell of freshly baked citrus fruit cakes is just awesome which makes kitchen totally aromatic.I have already posted basic lemon cake where butter was used but this is little bit different from that because here oil and yogurt place key roles which brings light and fluffy look to the cake..
This cake only needed soda which makes it very spongy..Always in citrus cakes baking I mean like orange cakes or lemon cakes use fresh juices not store bought because fresh lemon juice and lemon zest brings out a true lemony flavor.You can use wheat flour instead of White flour which makes cake 100% healthy..It is a perfect snack cake or even in breakfast also goes well.So,Bake this version next time. celebrate

PREPARATION TIME- 15 MINUTES
BAKING TIME- 40 MINUTES
WHAT YOU NEED
All purpose flour-1 cup
Eggs-2
Vegetable oil-3 table spoons
White sugar-3/4 tea spoon
Yogurt-1/4 cup
Lemon zest-1 table spoon
Baking soda-1/2 tea spoon
Salt-1/2 tea spoon
Lemon juice-2 table spoon
HOW TO BAKE
Preheat oven at 200 degree C.grease oil or butter in cake tin,dust it with flour in all sides and keep ready.
Break eggs in a bowl,add sugar mix till dissolve..Add yogurt,lemon juice,oil and stir every thing.Add lemon zest, salt,soda,mix well..
Add in flour and stir till blends well..Pour this in prepared tin and place in preheated oven. Bake for 30-40 minutes or until its done.Check out with tooth pick and turn off..Serve a warm slice with milk.
