There are so many varieties are there in cooking biryani.Like restaurants versions,regional versions or authentic versions.Vegetable biryani is one of the best treat for vegetarians..Though we are non-vegetarians sometimes cook veg variety too like on mondays..
I have already posted few different veg biryani recipes on blog and this is another version which is adding in list..This biryani is quite simple to make and very healthy also because of full of vegetables..You can add some cashew nuts,sweet corn,broccoli if you like..Whole garam masala ingredients gives a nice flavor as well so use along with store bought masala powder for strong flavor.

WHAT YOU NEED
butter+oil-2+2 table spoons
biryani masala-1 tea spoon
curd -1/2 cup
ginger garlic paste-1 tea spoon
mint,coriander leaves-1+1 cup
rice -2 cups+4 cups water (to cook)
whole garam masala ingredients:
cumin seeds-1 tea spoon
cinnamon stick-2 " inch
green cardamom pods-2 no
HOW TO COOK
Heat a vessel with butter+oil.Throw the whole garam masala ingredients,cook for few seconds. Now add all the finely chopped vegetables,green chillies,ginger garlic paste n saute for a minute. Now add salt,stir gently and cook for 5 minutes in medium flame.Now add biryani masala,curd and stir gently. Cook for 5 minutes and add mint, coriander leaves. Mix every thing and cook for 5 more minutes..Add water and let it boil. Add washed rice and stir gently.Cook in medium flame until water evaporates then keep the flame in low and place a tawa put the biryani vessel and cook for 10 more minutes.Turn off and serve hot with biryani.
