Kakarakaya Pulusu Recipe | Bitter Gourd Tamarind Stew | Spicy Tangy Kakaraya Gravy For Rice

Bitter gourd is one of the perfect vegetable for diabetic people which controls sugar levels in body..We telugu people amkes variety of dishes using this karela like fry,curry and this pulusu.Pulusu means where the main vegetable is cooked in tangy tamarind gravy with spices powders..

PREPARATION TIME-15  MINUTES
COOKING TIME- 20 MINUTES
WHAT YOU NEED
Bitter Gourd - 1 medium size
Onion - 1
Tamarind - lemon size
Jaggery - 1 small piece
Oil - 2 table spoons
For Tadka/Tempering
Mustard seeds- ½ tsp
Jeera/cumin seeds 1/2 tsp
Curry leaves-few
Asafoetida or hing -1/4 tsp
Red Chili powder-2 tea spoons/to taste
Turmeric powder-1/2 tea spoon

Salt-to taste
Coriander powder-1 tea spoon
HOW TO COOK
Wash and cut butter gourd into round slices. Remove the seeds if you don`t like..In a bowl, take little bit+ turmeric powder,mix karela pieces and rest it for 10 minutes.Wash and soak tamarind in water for 15 minutes and squeeze out the juice.
Heat a pan with oil,add mustard seeds,cumin seeds,curry leaves,crackle it..Now add finely chopped onions, GGP,saute for a minute in low flame.Then add karela,mix well,cook for a minute.Add in red chili powder,salt, turmeric powder,stir and cook for 2 minutes in medium flame.Now add tamarind juice,stir and cook in low flame for 2-3 minutes in low flame.Add jaggery piece,coriander powder,stir gently and cook for a minute.Turn off and serve hot with white rice.It tastes best next day.
