Bitter gourd is a healthy vegetable which helps to control the blood sugar levels in diabetes. This is a simple curry with onion,tomato base.It tastes best with rice and roti.
Basically bitter gourd tastes bitter so people used to remove the seeds or some people also boils it before using in curry.But,here I skipped the boiling step and still it tasted good.Bitterness of the dish may also depended on the type of karela/ bitter gourd.So,Cook as per your choice and serve hot with rice or chapathi.

WHAT YOU NEED
Bitter gourd-1 medium size
Oil-1 table spoon
Cumin seeds-1/2 tea spoon
Mustard seeds-1/2 tea spoon
Curry leaves-few
Onion-1 small
GGP/ginger garlic paste-1 tea spoon
Red chili powder-1-2 tea spoon
Salt-to taste
Turmeric powder-1/2 tea spoon
Tomato -1 medium size
Jaggery piece-small 
Coriander powder-1 tea spoon
HOW TO COOK
Wash and chop bitter gourd into 1 inch size pieces.take turmeric powder,salt in a bowl add this pieces and rest for 15 minutes.Heat a pan with oil,throw cumin seeds,mustard seeds,curry leaves and crackle it.Now add finely chopped onions,GGP and saute for a minute in low flame. Now add karela,mix well and cook for a minute. Then add red chili powder,salt,turmeric powder,stir gently and cook for 5 minutes in medium flame.Then add finely chopped tomatoes and stir well.Cook for 5 minutes again,add little bit water to avoid burning.Then add little bit jaggery piece,coriander powder,stir well,cook for 5 minutes and turn off.
