Back to blogging after a short break.Well!! It`s an unexpected gap which kept me busy and totally made me to forgot blogging for a while. After a month of busy schedule,here Iam with a simple dish called coconut chicken curry..
Actually I have few recipes in draft so thought to post all these days.This is a simple yet spicy chicken curry with coconut addition which is popular in kerala. The dry coconut flakes which are fried well in oil,gives a nice crunchy taste with spicy touch in the curry.It is a thick type of dry curry which is perfect with mild pulao`s or chapathis. WHAT YOU NEED
oil-2-3 table spoons
cumin seeds-1 tea spoon
cloves-3
cinnamon stick-1 inch
staranise-1 flower
green cardamom pod-1" no
dry coconut pieces-1 cup
onion-1 big size
ginger garlic paste -1 table spoon
tomato-1 big
red chili powder-2 tea spoons
salt-to taste
turmeric powder -1 tea spoon
coriander powder-1 tea spoon
cumin powder-1 tea spoon
garam masala -1 tea spoon
chicken with bone-300 grams
fresh coriander leaves-few
HOW TO COOK
Wash chicken twice,keep aside..Heat a pan with oil,throw cumin seeds,cloves,cinnamon stick, staranise,green cardamom pod,saute for few seconds.Now throw chopped coconut pieces, saute for a minute.Then add finely chopped onion,ginger garlic paste and fry for 2 minutes in medium flame.Now add chopped tomato,stir gently.Then add red chili powder,salt,turmeric powder and cook for a minute.Now add coriander powder, cumin powder,garam masala and stir well.Now add washed chicken and mix well. Add 1-2 cups of water,cook in medium flame for 20-30 minutes until chicken is done.. Check it out in between to avoid burning,and cook till chicken is soft then turn off.add some fresh coriander leaves stir gently and serve hot with chapathi or rice along with lemon wedge.
