Coconut Milk Vegetable Dum Biryani | How to cook veg biryani | Veg Dum Biryani Recipe With Coconut milk

Apart of chicken and mutton biryanis I have also posted few veg biryani and pulao recipes in different methods..So,here goes another one which is easy and delicious too..I added coconut milk which is a main ingredient in the recipe..
If you like can add home made fresh coconut milk I used store bought milk which is thick in texture..Better to use basmati rice for rich taste or good look instead of normal rice but I have tried with both varieties too..Anyway,check out the full recipe and try it out..

WHAT YOU NEED
Whole garam masala Ingredients
cumin seeds-1 tea spoon
bay leaf-1
clove seeds-3
staranise-1 flower
green cardamom pods-2
Other Ingredients
oil + Butter - 2+1 table spoons
Onion- 1 small
Ginger garlic paste-1 tea spoon
Carrot-1/2 cup
Potato-1/2 cup
Green capsicum-1/4 cup
Frozen Green peas-1/4 cup
Frozen Sweet corn-1/4 cup
Mushrooms-1/2 cup (I used store bought)
Mint+Cilantro leaves-handful
Red chili powder+salt- to tase
Turmeric powder-1/2 tea spoon
Thick Coconut milk-1 cup
Yogurt-1/2 cup
Normal rice-2 cups
Pinch of orange food color
Warm milk-1/4 cup
HOW TO COOK
Heat a vessel with oil (butter) add whole garam masala ingredients.Add finely chopped onion,ginger garlic paste,saute for a minute in medium flame..Now add finely chopped carrot,potato stir and cook for 2 minutes in low flame.Now add green capsicum,green peas,sweet corn,mushrooms and mix well.Cook for 2 minutes,add mint cilantro leaves and mix every thing..Cook for a minute now add red chili powder,salt,turmeric powder and mix well.Cook for a minute.Now add coconut milk,yogurt stir gently and cook for 2-3 minutes n low flame til everything turns into semi dry mixture..Turn off the flame.Now in another vessel cook rice til 80% done.Drain rice in strainer or in big slotted ladle.Now heat a tawa pan on high heat, put the vegetable cooked vessel,add rice on top,spread evenly.Spread some food color by mixing in warm milk if you like.Keep flame in low now and cook in dum method for 15 minutes and turn off..Serve hot with raita..
