Vegetable butter fried rice | How to make vegetable fried rice | Spicy veg fried rice in Indian style

Here is the simple fried rice recipe which is loaded with full of vegetables..I have added lots of veggies like potato,broccoli,frozen sweet corn,green peas and triple colored bell peppers.You can add or skip those as per your taste..This rice is oil free but still good in taste because of adding butter.
You can increase the quantity of butter and it`s a great option to make for lunch or when you hvve left over rice..If you would like to pack it for lunch box better to use freshly cooked white rice..With a cup of curd or raita this fried rice tastes so good.Try this next time and enjoy hot platter..

WHAT YOU NEED
Leftover White rice-2 cups
Onion-1 small
Ginger garlic paste-1 tea spoon
Carrot pieces-1/2 cup
Broccoli florets-1/2 cup
Potato pieces-1/3 cup
Green,yellow,red color capsicums-1 cup mixed
Green peas-1/4 cup
Sweet corn -1/4 cup
Salt-to taste
Butter -2 table spoons
Red chili powder-1 tea spoon
Turmeric powder-1/2 tea spoon
Mint+Cilantro leaves-handful
Black pepper powder-1/2 tea spoon
Amchoor powder-1/2 tea spoon
Chat masala -1/2 tea spoon
Garam masala -1/2 tea spoon
HOW TO COOK
Heat a non stick pan add finely chopped onion, ginger garlic paste,saute for a minute..Now add finely chopped carrot,broccoli florets,potato pieces,saute and cook for 2 minutes..Then add green,yellow,red color capsicums, green peas, sweet corn and mix well..Add little bit salt and cook in low flame for 5-8 minutes..Then add butter and stir once.Now add red chili powder, salt,turmeric powder mix well and cook for a minute..Then add mint, cilantro leaves,black pepper powder,amchoor powder,chat masala and garam masala.Mix every thing gently and add rice now..Stir well and cook for 5 minutes in low flame.Turn off and serve hot with raita..
