Carrot Honey Cake Recipe | Carrot Cake With Honey & Olive Oil | Bolo de Cenoura Com Miel | Carrot Cake Without Sugar

Sugar is the common ingredient in baking which I too use regularly.So,for a change I thought to use honey.In many of my cakes posts I mentioned that carrot cake is my first favorite so this is also a different carrot cake recipe with wheat flour and honey..
I used olive oil in this but can replace with un salted butter.. This cake is soft and moist in texture with mild sweet ness and of course healthy too. Try this next time and share your pictures on my blog or in facebook page.

WHAT YOU NEED
Carrot-2 big size
Olive oil-1/3 cup
 3% fat milk-1/3 cup
Eggs-2
Honey-2/3 cup
Vanill essence-1 tea spoon
Baking powder-1 tea spoon
Baking soda-1/2 tea spoon
Cinnamon powder-1 tea spoon
Salt-1/2 tea spoon
Wheat flour -1 cup
Raisins-handful
HOW TO BAKE
Peel and chop carrot.Then grind into coarse mixture..Preheat oven at 180 degree C..take a baking tin/pan,grease with butter or oil and keep aside.
Now in a mixing bowl,add milk,olive oil,eggs,honey,vanill essence and mix every thing finely..
Now add baking powder,soda,cinnamon powder,flour and mix well..Then add ground carrot,raisins and stir to mix evenly.Pour this in tin and bake for 30 minutes..
Check out with tooth pick,if it is clean turn off the oven or bake for 5-10 more minutes and turn off..
Keep it in room temperature for 10-15 minutes and serve a slice with hot coffee or milk.
