How to cook Chicken Dum Biriyani Using Boneless Chicken | Fried Chicken Biryani Recipe | Chicken Tikka Biryani Recipe | Murgh Dum Biryani Recipe with Step by step Pictures

For many of the Indians sunday means full of non-vegetarian food without any limits..Even our family can`t magine sunday without delicious biryani..These days,blindly fixed to biriyani either it is with chicken or mutton. In the earlier days it was like a big task to do,but later on with experience started cooking easily that too without staying much time in kitchen. By following few steps like,marinating meat last night, chopping herbs before a day,keeping ready all the ingredients before cooking may helps you to cook it fastly without any irritation.

Coming to the recipe,it is actually chicken tikka biriyani using boneless chicken.The difference between regular biryani and this one is , In this chicken tikka biriyani we use food color and we need to fry the chicken first.Frying chicken first helps to assemble to biryani fast and also it is without bone so time saving to cook.I added very less color but you can add some more or red apple color for bright look.over all it`s really easy to cook and a perfect dish for sunday lunch to treat your family..Check out the full recipe and try it next time..
Tips to cook perfect biriyani
1.soak rice for 30 minutes minimum.Try to use basmati rice.
2.Take chicken with skin which increases the taste.
3.Marinate chicken for longer time 1 day or 1 hour at least
4.Use lots of fresh herbs-mint+cilantro leaves.
5.Cook the masala mixture till you get a gravy type thick consistency.
6.Cook on dum for 15 minutes in low flame with heavy weight on top.
7.Once when rice starts boiling,check out the rice granule by breaking with your finger,if it is soft,immediately turn off gas and pour rice in colander.
8.Don`t keep cooked rice in colander for long time.spread ot fast on chicken.
9.Use whle garam masala while cooking rice.
10Use food color and fried rice after layering rice in vessel for rich look and also for taste.

To marinate chicken
Boneless Chicken-500 grams
Red chili powder-1 tea spoon
Salt-little bit
Ginger garlic paste-1 tea spoon
Kasoori methi powder-1/2 tea spoon
Coriander powder-1/2 tea spoon
Garam masala-1/2 tea spoon
Cumin seeds-1 tea spoon
Curd-3 table spoons
Orange food color-2 pinches
To cook biryani
Oil-1/4 cup
Basmati rice-1 cup
Oil-2 table spoons
Bay leaf-2 small
Cinnamon stick-2 inch stick
Green cardamom pods-3
Onions-2 small size
Ginger garlic paste-1 tea spoon
Tomatoes-2 small
Spice Powders 
Red chili powder-1 tea spoon
Salt-to taste
Turmeric powder-1/2 tea spoon
Ginger garlic paste-1 tea spoon
Kasoori methi powder-1/2 1/2 tea spoon
Coriander powder-1/2 tea spoon
Garam masala-1/2 tea spoon
Curd -1/4 cup
Coriander leaves finely chopped - 1 cup
Mint leaves- chopped -1 cup
Chicken marination:
In a mixing bowl,take red chili powder,salt,turmeric powder,ginger garlic paste,kasoori methi powder, coriander powder,garam masala,cumin seeds,curd,mix well then add in food color and make it like a smooth paste.
Now add in washed chicken and mix every thing.Rest it over night or at least 2 hours.Mean while wash and soak rice for 30 minutes minimum.
Heat a thick bottomed vessel,add oil.When it`s hot add chicken,roast well.Cook in medium flame for 10 minutes till chicken becomes soft.Then take it aside..
Cook rice:
Add little bit salt and 1 tea spoon of oil in rice and cook soaked rice till 70%,drain excess of water.Spread rice in colander,add 1 table spoon of oil and mix gently.this step helps to avoid sticking rice granules.
Cooking biriyani:
Then in the same vessel,add some more oil,throw bay leaf,cinnamon stick,cloves,cardamom pods.Saute for few seconds and add finely chopped onions,ginger garlic paste,mix well and cook for 2 minutes in low flame til onions turns soft.
Then add finely chopped tomatoes,stir once and add spices powders like,ed chili powder,salt,turmeric powder,ginger garlic paste,kasoori methi powder, coriander powder,garam masala,curd and cook for 2 minutes in low flame.
Assembling layer wise:
Now add fried chicken,mix well and cook for 10 minutes in low flame.Now take half of the mixture in a bowl and keep aside..Now in vessel,on the cooked chicken mixture spread half of the basmati rice. Throw some freshly chopped coriander leaves,mint leaves.
Then spread remained cooked chicken and also add remained rice..Add some more  coriander leaves,mint leaves. Now heat a thick tawa pan,put this biryani vessel,cook on dum for 15 minutes in low flame.Keep a heavy weight on lid.Turn off and let it rest for 15 minutes.Serve hot with raita,lemon wedge,onion,cucumber slices.
