Mango Kalakand Recipe | How to make Mango Kalakanad | Mango Kalakand with Ricotta Cheese | Diwali Sweets

Being a sweet tooth and Mango lover, of course, I search for recipes and loves to experiment even. Basically, Kalakand is a milk sweet which is quite popular in India. So, by following the same recipe tried this Mango Kalakand. Mango is a versatile fruit, which can create various sweets and desserts.
This is also one of the most delicious sweet which is perfect to try on festival times. I tried this with store-bought ricotta cheese (paneer) but homemade is much better than the readymade which brings out a fresh flavor yet nice taste. Try this next time and let me know your comments.

Ghee/ Clarified Butter-1/4 cup+{(1/4 cup )optional}
 Dry fruits (cashews, raisins, almonds)-1/2 cup chopped 
 ricotta cheese-1 cup 
 condensed milk -1/2 cup

Mango pulp-1 cup 

Heat a nonstick pan with ghee, add dry fruits and saute for a minute until raisins bubbles. Then take them on a plate. 
Now in the same pan add some more ghee, add the crumbled ricotta cheese, fry gently. Then add condensed milk and stir well.
Cook this 3 minutes in medium flame and add mango pulp. Stir this in medium-low flame for 5 minutes.Add some more ghee if you like, and add fried dry fruits. Stir well and cook.
When the mixture starts leaving from the sides of the pan turn off. Grease/apply ghee on a plate, put this mixture and give a good shape. Cut into square shaped pieces, rest it for some time and serve.
