Mushroom Paneer Pulao with Coconut milk | Paneer Mushroom Biryani with Step wise Pictures | Lunch Box Ideas for Kids | One Pot Meals for Lunch

 Rice is the main food which we Indians prefers for lunch always. So, instead of white rice, it`s nice to have a different kind of pulao recipes with vegetable addition.Paneer pulao and Mushroom pulao`s are quite popular and I have already posted these two recipes on the blog.
So, this time by combining these two, tried a new pulao recipe with coconut milk addition. You can use basmati rice for the best taste and look but I used normal rice only.Try this version next time and serve hot with curd or raita.

 WHAT YOU NEED
oil-2 tablespoons
Onion-1 small size
Whole garam masala ingredients:
Cardamoms pods -2
Cloves-3
Star anise-1 no
Cumin seeds- 1 teaspoon
Fennel seeds -1 teaspoon
Cinnamon stick-2" inches
Green chili-5-6 
Freshly chopped mint+cilantro leaves-handful
Bay leaf-1 no
Paneer/Ricotta cheese-1 cup pieces
Mushroom-1 cup (I used canned )
Thick Coconut milk-1 cup
Salt - to taste 
Rice-1 cup +water - 1 cup (to cook rice)
HOW TO COOK
Heat a vessel, add oil. Now add finely chopped onions, whole garam masala ingredients, green chili, freshly chopped mint+cilantro leaves, mix well and cook for 2-3 minutes in medium flame.Turn off and let it cool.Then grind into a fine puree.
Now heat a the same vessel, add oil, throw bay leaf, ground puree and saute once. Then add paneer and mushroom. Stir gently and add coconut milk+water.add salt to taste and let it boil.
While water boiling add in soaked rice, stir gently and cook in medium flame till water evaporates. Now heat a tawa on high flame, put this rice vessel and cook on low flame for 5-10 minutes and turn off.Serve hot with raita.
