Sweet corn Fried Rice Recipe | Sweetcorn Pepper Fried Rice | Sweet corn Recipes | Lunch Box Ideas | One Pot Meals

Sweetcorn is a versatile ingredient which we can in various forms like to make rice varieities,gravies or even snacks. Usually I prefers canned sweet corn and likes to make pulao and gravies. I have shared few recipes in blog using sweet corn and here is the another recipe which is a one pot meal for lunch.
Even you can pack this for lunch box with some curd.
On my own choice,I have added triple color bell peppers which brought a nice color to rice and made it delicious.Try this version next time if you have left over rice or sweet corn in hand..Enjoy a hot plate of rice with curd and any fritters.


WHAT YOU NEED
Oil-3 tablespoons Garlic-3 cloves Green chilli-2 Onion-1 small size Canned/Tin Sweet corn- 1 cup
Red,Yellow,Green color Bellpeppers chopped-1 cup (mixed) Cooked rice-1 cup
Soya sauce-1 teaspoon White or black pepper powder-1/2 -1 teaspoon Ajinomoto -1/4 teaspoon Soya sauce-1/2tsp White vinegar-1/2 teaspoon Salt-to taste Spring onion-1 handful Coriander leaves-few

HOW TO COOK
Heat a nonstick pan with oil,add finely chopped onions, chopped green chili, garlic,saute for a minute. Now add chopped bell peppers,sweet corn and stir gently. Add little bit of salt and cook for 5 minutes in medium flame.
To this add, soya sauce, ajinomoto, vinegar and stir well. Now add rice,mix once and cook for 5 minutes in low flame.Finally,add pepper powder, salt to taste, chopped spring onion stir everything evenly and turn off.Serve hot.
