Egg fried rice is an easy dish to cook yet tastes so good when you serve hot. There are so many versions in making fried rice, especially street side fried rice tastes great which I heard actually, but never had it :(
As I heard, most of the bachelors prefer to cook egg fried rice for their lunch box because it `s a time saver recipe.

Coming to this recipe, This fried rice is a bit time taking because I have added some vegetables along with eggs to make it tastier and also it`s healthy too. Add a good amount of butter and the right amount of salt for perfect taste. This recipe has an amazing balance of flavor while remaining light. PREPARATION TIME- 15 MINUTES
COOKING TIME- 15-20 MINUTES
WHAT YOU NEED
Butter -2  tablespoons
Cumin seeds-1 teaspoon
Onions-2 small size
Ginger garlic paste-1 teaspoon
Salt- to taste
Red chili powder-1-2 teaspoon
Turmeric powder-1/2 teaspoon
Eggs -2 big size
Cooked white rice -2-3 cups
Garam masala-1 teaspoon
Coriander powder-1 teaspoon
Coriander leaves-few
Vegetables-1 carrot, 4 french beans, 1 small capsicum, 1/2 cup green peas
HOW TO COOK
1.Wash and chop vegetables and keep aside. Heat a nonstick pan, add butter throw cumin seeds. 
2.Then add finely chopped onions, ginger garlic paste and saute for a minute in medium flame.
3. Now add finely chopped veggies one by one and mix gently. 
4.Cook for 2 minutes in medium flame then add salt, red chili powder, turmeric powder and mix well.
5.Keep the flame in low and cook for 5 minutes. then break the eggs and mix immediately. It turns like scrambled eggs by mixing with vegetables.
6.After 2 minutes, add cooked rice and stir evenly.Keep the flame in low and cook for 5 minutes.
7.Add garam masala, coriander powder and stir gently again.Cover and cook for 2 more minutes.
8. Finally, add fresh coriander leaves and mix once.Serve hot with curd raita.
