coconut pound cake loaf | simple coconut pound cake recipe | homemade pound cake recipes | butter pound cake recipes

I used to feel tense to bake pound cakes before because of the butter amount which recipe calls. But later understood, there are some recipes which we can bake using a small amount of butter. So, my pound cakes baking process is going these days regularly at my home.๐Ÿ˜œ I have posted 2-pound cake loaf recipes before which were basic and plain.
This time sharing a pound cake recipe which is fully filled with coconut flavour.๐Ÿ’™ Coconut folded recipes, especially desserts are quite delicious and favourite to so many and even I am in that category. I used store bought white desiccated coconut flakes which are unsweetened. Use best quality flakes for nice flavour and bake it.  You can store this for a week in the refrigerator and tastes awesome with a hot cup of coffee๐Ÿ˜‹

PREPARATION TIME-15 MINUTES
BAKING TIME-40 MINUTES
WHAT YOU NEED
All-purpose flour-1 1/2 cups
Un-salted butter-1/2 cup
Sugar-3/4 cup
Eggs-4
White Coconut flakes-1/2 cup
Salt-1/2 teaspoon
Baking powder-2 teaspoons
Coconut extract-1 teaspoon (I skipped)
HOW TO BAKE
Take soft butter in a bowl, beat for a minute in low speed, add sugar and beat once again.
Now to this add 2 fresh eggs, beat with a hand mixer till eggs dissolve in the butter.
Then add another 2 eggs and beat again until everything turns into creamy.
Then add flour, baking powder, salt and beat well.
Now add desiccated coconut flakes and gently mix with a spatula.
Take a bread loaf pan, set a parchment paper, apply butter on that paper.
Preheat oven to 180-degree centigrade. Pour the batter into the tin and spread it evenly on top. Now place this in the oven and bake for 45 minutes. Check out with a toothpick and it comes out wet bake for 10 more minutes.
Each oven is different in capacity so, always be alert while baking and keep an eye after baking for 30 minutes.
When the pound cake is perfectly done, turn off oven and cool it at room temperature. Serve a warm slice with hot coffee.
