Cooking gravies either vegetarian or non-vegetarian with green masala is my favourite any time. Green masala means nothing but, a ground paste of mint, cilantro, green chilli and whole garam masala ingredients. You can even add spinach leaves to this green masala.

Especially, non-veg gravies like mutton and chicken taste so good with a freshly made green masala. Using green masala I cooked prawns gravy, Nilgiri chicken korma long time back. So, this time I thought to try with mutton so, this is how I made a simple method. Pressure cooking method is easy yet time-saving too. This hot and spicy gravy tastes good with chapathi, roti and naan. Try this version and let me know how it turned out for you.

PREPARATION TIME-15 MINUTES
COOKING TIME- 30-35 MINUTES
WHAT YOU NEED
onions-2 medium size
ginger finely chopped-2 tablespoons
garlic cloves-5 
mint+cilantro leaves-2 handfuls
green chilli-6-8
mutton with bone (lamb meat or goat meat)-300 grams
yoghurt-1 cup
salt- to taste
coriander powder-1 teaspoon
whole garam masala ingredients
cumin seeds-1 teaspoon
javithri-1 small flower
cinnamon stick-1" inch stick
cloves-3
cardamom pod-1
star anise-1 small flower
HOW TO COOK
In a mixy jar take chopped onions, ginger, garlic cloves, mint+cilantro leaves, green chilli, whole garam masala ingredients and grind into a fine paste with 1/4 cup of water.
Now heat a pressure cooker, add oil, when it is hot, add finely chopped onions and fry till turns into brown in colour in low flame.
Now add washed mutton, mix well. After 5 minutes add the ground masala paste and stir well.
After 5 minutes add in yoghurt, salt and mix well. Then add 2 cups of water, close with lid and pressure cook for 30 minutes in medium flame.
After releasing the air check out the meat is cooked perfectly or not, If the meat is tender, it means cooked well. Finally, add in coriander powder, stir gently and serve hot with roti or bagara rice with a lemon wedge.
