Soya chunks or soya nuggets are commonly called as meal-maker which looks like meat. These are high in protein and a good substitution for vegetarians. Though no one likes these nuggets at my home, I like personally so tries different gravies most of the time which taste so good with hot roti.
This is the simple rice which I have creative as per my taste when there was a leftover rice. This green flavoured soya rice is tasty and goes well with curd. If you like soya chunks, can try this one-pot meal for a change and try to have it when it is hot to enjoy the taste.

WHAT YOU NEED

soya chunks -2 cups
cooked white rice-2 cups
garam masala-1 teaspoon
onions - 1 medium size
For the green masala paste
coriander leaves-a handfull
mint leaves-a handful 
green chilli-5-6
ginger pieces-2-3
garlic cloves-2-3
cloves-2
oil-2 tablespoons
mustard seeds-1 teaspoon
cumin seeds-1 teaspoon
red chilli-1
urad dal-1 teaspoon

HOW TO COOK
heat 2 cups of water in a vessel. when the water starts boiling add soya chunks and cook for 3 minutes in medium flame then strain them in a colander and keep aside.
Now in a blender (mixy jar) take coriander leaves, mint leaves, green chilli, ginger pieces, garlic cloves, cloves and grind into a fine paste, keep this aside.
Now heat a non-stick pan with oil, add mustard seeds, cumin seeds, red chilli, urad dal and saute for few seconds. Now add finely chopped onions and cook for a minute in medium flame.
Then add boiled soya chunks, stir once, add the ground green paste, stir to mix well and cook for 5 minutes in low flame.add salt to this.
Now add cooked white rice, garam masala stir carefully to mix the soya masala with rice. Cook this for 5 more minutes and turn off. Serve hot with curd raita.
