aloo vankaya masala koora | brinjal potato curry recipe | aloo baingan ki subji | potato eggplant masala curry | easy side dishes for chapathi

Subji or Curry or Koora whatever it is, In our Indin cuisine this dish takes the main place in the daily menu which we serve with hot white rice or chapati mostly. This is one of the famous dishes In our Indian cuisine which we cook often. Though north Indian cooks this subji there is a slight difference with our south Indian style.
Actually, I and my family members don`t like potato and big brinjals but this time I found small size brinjals which I like so immediately tried this curry and served with roti. This is simple to cook, tastes spicy and it`s really a good combination with roti. Potato and Brinjal are the vegetables which most of the kids like so next time try this and serve to them. They will enjoy definitely.

WHAT YOU NEED
 oil-2 tablespoons
onions-1 small size
ginger garlic paste -1 teaspoon
potatoes-4 medium size
brinjals -10 small size
salt to taste
 red chilli powder-1 teaspoon
coriander powder-1/2 teaspoon
 cumin powder-1/2 teaspoon
 turmeric powder-1/2 teaspoon
 tomatoes-2 big size
garam masala-1 teaspoon
 coriander leaves-few
Tadka ingredients
cumin seeds-1 teaspoon
mustard seeds-1 teaspoon
curry leaves-few
HOW TO COOK
Heat a non-stick pan with oil, add tadka ingredients. Then add finely chopped onions, ginger garlic paste saute for a minute.
Now add cubed potatoes, stir gently, after a minute add chopped brinjals. Then add salt to taste and mix well. Cook this on low flame for 5 minutes.
Then add red chilli powder, coriander powder, cumin powder, turmeric powder mix well and cook for 3 minutes on low flame.
Now add finely chopped tomatoes, after a minute add1/2 cup of water, stir everything gently, close with a lid and cook for 5 minutes, till potatoes turn soft. (if need add 1/3 or 1/4 cup  of water again)
When the curry is done, add garam masala, coriander leaves, stir once and turn off. Serve hot with roti.
