Navaratri season is going on all over the places where people are happy in celebrations. This festival time calls for sweets and snacks to make the celebrations happier. This dates carrot kheer is one of the finest yet healthiest sweet to try. Sweets are delicious in taste but also high in calories which not good for health.
Dates are the best replacement for sugar so if you are sweet tooth can try this payasam not once but often. I used Khidri dates which are so sweet in taste so whatever variety available for you can use. Try this healthy version of payasam and share your comments or pictures.

PREPARATION TIME-15 MINUTES

WHAT YOU NEED 
Carrot-2 big size
Dates (remove seeds)-15
Ghee-2-3 tablespoons
1/2 litre of milk
Cardamom powder-1 teaspoon
Dry fruits and nuts :
almonds+cashews+raisins+chironji nuts (5 each one)
HOW TO COOK
Peel carrot, chop into pieces, boil in 2 cups of water for 10 minutes in low heat then grind into a puree.
Chop dates (remove seeds) and grind into a paste.
Heat a non-stick pan, add ghee, fry the dry fruits and nuts and keep them aside.
In the same pan add 1 tablespoon ghee and fry the carrot puree for 2 minutes. Then add ground dates puree and stir well.
Now add 1/2 litre of milk, mix well and cook for 10 minutes in low heat. Then add cardamom powder, stir gently, cook for 5 more minutes and turn off. Serve hot or cold.
