Chop okra in 1 inch size pieces. Also, onion and tomato.

Take curd in a bowl and add in cumin+coriander powders, garam masala, chat masala and mix well.

Now heat a pan with 1/2 tbsp oil and add in chopped okra and saute until they "half cook" nicely..

Now remove this on plate and again add 1/2 tbsp oil and add whole spices.

Then add onion and cook til soft..Continue with tomato and mix well.

Then add spice powders.Chili powder, turmeric powder, salt, ginger garlic paste.Mix once and cook for 1 minute.

Cook this for 2 minutes and then add tamarind paste and kasoori methi.

Cook for 5 minutes in medium flame and turn off.Add chopped fresh cilantro leaves and serve hot with rotis/pulaks/rice.

Sauteing okra first saves the cooking time and avoids the stickiness of it.

Add 1 tsp sugar to balance with tamarind paste.

Kasoori methi gives flavor.don`t skip it

If curd is too thick add some water.Other wise you may not get gravy version

chat masala is optional. If you don`t have leave
