Coconut Milk Semiya Upma | Vermicelli Upma With Coconut Milk | Coconut Milk Vegetable Semiya Upma | Simple Dinner Ideas

I love semiya,usually cooks semiya upma for dinner.But these days feeling bore to cook same old upma every time,so experimenting every time different methods..Few days back,I have posted Hara Masala Semiya Upma which was my very own recipe.Same like that ,this is also my very own recipe which I created recently..This is super delicious upma with coconut milk..
Because of coconut milk this upma tastes very tasty and of course healthy because of mixed vegetables..I don`t measure generally while cooking,so in this recipe also I did n`t measured water and coconut milk quantity but giving the measurements approximately..So,please be conscious while adding but I hope these quantities may does n`t disappoints you..Try this and enjoy hot with pickles and curd.

Semiya /vermicelli-1 cup
Ghee +oil -1 tbsp_1 tbsp
Mustard seeds -1/2 tsp
Cumin seeds 1/2 tsp
Chana daal -1/2 tsp
Urad daal -1/2 tsp
Cashew nuts -5
Ginger chopped - 1 tsp
Green chilly 4 n -r red chili-5
Curry leaves -few
Hing-2 pinches
Turmeric-1/2 tea spoon
Onion chopped (medium size)- 1 
Salt-as per your taste
Carrot pieces - ¼ cup
Potato pieces-¼ cup
Green peas - ¼ cup (i used frozen)
Sweet corn- ¼ cup (I skipped)
Mint+cilantro leaves-2 handfuls
Coconut milk- ½ cup

Heat ghee in a pan add semiya and roast it and keep it aside.
In the same pan add oil, mustard seeds, when mustard seeds is splutter, add chana dal,Urad dals,cashew nuts,sauté it till dals are slightly brown,add chopped ginger,chopped green chilly, curryleaves,hing,turmeric,,chopped onions,,salt. sauté it for a minute and add carrot,
green pea,potatoes,mint+ cilantro leaves mix it well, add coconut milk and 3/4th-1 cup water, once it comes to boil add semiya, mix it and put the lid on let it cook for 2-5 minutes in low flame, then add little bit ghee on top and put the lid on and switch off the flame.
