Kolhapuri mutton curry is a traditional way of cooking meat with a unique flavored masala. It is simple to cook because you don't have to add so many ingredients in this except masala making.For the beginners or people who have less time, this is the simple method.
And believe me it is much tastier because mutton gets cooked with all the masala from the begin-ning. After pressure cook-ing again we adds masala in the dish which brings out super aroma.Overall,masala plays a key role in the recipe so pre-pare the masala and cook this dish. Serve hot with chapathi or rice..

  • 1/2 kg Mutton pieces
  • 1 tbsp ginger-garlic paste
  • 2 tbsp refined oil
  • 1/2 tsp turmeric powder
  • 1 tsp salt or to taste
  • 2 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 2 medium size Onions-chopped fine
  • 1/2 cup tomato puree or 2 medium size tomatoes finely chopped
  • few coriander leaves+mint leaves
  • 1 1/2 - 2 cups water
  • Kolhapuri masala-2 table spoons

For Kolhapuri Masala:
Bay leaf – 2 no
Black pepper – 1 tablespoon 
Cinnamon stick two inch long: 2 no
Cloves – 5 no
Coriander seeds – 1 heaped tablespoon
Cumin seeds – 1 tablespoon
Peanuts – 1/4 cup

Fresh coconut pieces-1/2 cup
Red chili-4
Green cardamom – 4 no
Mace small piece – 2 no
Curry leaves – few
Star anise – 2 no
Poppy seeds – 1 heaped teaspoon (I skipped)

Heat a pan add all the above ingredients,roast for 5 minutes in low flame.Cool it then grind into powder.Use later for your recipes.
Heat pressure cooker with oil,add chopped onions,ginger garlic paste saute for a minute..Add in washed mutton,mix it cook for 5 minutes in high flame..Add all spice powders, to-mato puree,cilantro+mint leaves,freshly made kolhapuri masala (1tbsp),enough water and mix every thing..Pressure cook for 5-6 whistles or 40 minutes in medium flame.If it is goat meat takes longer time than the lamb meat..So,be patie-nce,cook in medium flame otehr wise it may burn in the bot-tom.Once the curry is done open lid,add kolhapuri masala (1tbsp) again,stir nicely and serve hot with chapathi or roti along with lemon wedge and onion slices..
