Vermicelli Biriyani | Semiya Biryani | One Pot Meal Recipes | Healthy Lunch Box Recipes

Semiya is my favorite which I love to cook in different methods for dinner always..Semiya Upma is our all time favorite dish which I used to cook for dinner mostly..For a change I have tried few different dishes like upma with coco-nut milk,hara masala semiya upma which are already posted in blog.So,this time came with biriyani recipe which is a perfect dish for lunch or dinner..
It is a healthy one pot meal which is loaded with full of vege-tables and herbs..Adding mint and cilantro leaves gives a nice flavor to the biriyani..If you are avoid- ing rice,this will be the good replacing recipe for you..Here I added my favorite veg-etables but you can add any veggies as per your taste..Do give a try and share how it turned for you..

WHAT YOU NEED
Semiya /vermicelli-2 cups
Ghee +oil -1 tbsp_1 tbsp

Cashew nuts -5
Ginger garlic paste/GGP- 1 tsp
Green chilly 4 n or red chili-5
Curry leaves -few
Hing-2 pinches
Turmeric-1/2 tea spoon
Onion chopped (medium size)- 1 
Salt-as per your taste
Carrot pieces - ¼ cup
Potato pieces-¼ cup
Green peas - ¼ cup (i used frozen)
Sweet corn- ¼ cup (I skipped)

Mushroom chopped-1/4 cup
Mint+cilantro leaves-2 handfuls
Curd- 1/3 cup

Cumin seeds 1/2 tsp
Green cardamom pods-2

Bay leaf-1
Cinnamon stick-1 inch
Cloves-3
HOW TO COOK
Heat ghee in a pan add semiya and roast it and keep it aside.In a vessel heat 4 cups of water while boiling add 1tsp of oil and add semiya and cook till soft.
In another non stick pan add oil,add whole garam masala, cashew nuts,red chili,sauté for a while and add GGP+veggies. Now add salt and sauté it for a minute.Cook for 5 minutes in medium flame and add 
turmeric powder,chopped cilantro mint leaves and curd..Cook for 5-10 minutes in low flame and add cooked semiya.Mix it and put the lid on let it cook for 2-5 minutes in low flame, then add little bit ghee on top and put the lid on and switch off the flame.
