Dal Bukhara Recipe | Chilka Urad dal | Whole Urad dal Masala | Split Black Gram Dal Tadka | Side Dish for Roti

Legumes play huge role in south indian kitchen. Specially we telugu people uses toordal.urad dal,yellow moong dal and green moong beans almost daily in kitchen.Along with these I started using whole black urad dal regularly nowadays which is very healthy and protein packed. lentil based dishes are great as sidedish in our Indian's  houses.
There are three different types of urad dals.. whole black urad which is used to make the popular Dal Makhani, white urad dal and the split black urad which is used in this recipe.All three urad dals have a significant difference in taste and currently iam using two types of dals at home often.

Coming to this recipe it is a gravy type dish which cooked on onion tomato base,spices along with split black urad (urad chilka). It is rich in protein and fiber.This highly nutritious dal is full of flavors and can be a satisfying wholesome meal when served with roti, rice or naan.

Split black urad dal - 1 cup
Medium size Onion - 1 (chopped)
Medium size tomato- 2 Chopped
Ginger garlic paste - 1 teaspoon
kasoori methi - 1 tea spoon
Coriander Powder- 1/2 tea spoon

Cumin Powder- 1/2 tea spoon
Garam masala- 1/2 tea spoon
Turmeric powder- 1/2  teaspoon
Red chilli Powder- 1 table spoon (or to taste)
Salt- to taste
water-2 cups
For Tadka
Oil  - 1-2 table spoon
Jeera/cumin seeds- 1 teaspoon

Green cardamom-1
Javithri flower-1 small
Cinnamon stick-1" inch
Wash dal twice,soak for an hour minimum or over night if possible and pressure cooker with 3 cups of water for 3-4 whistles ( Depending on the soaking time and pressure cooker variety, time may different for each one ). Open the lid and adjust water level.Heat oil in pan add whole garam masala ingredients, saute well till it splutters.Add finely chopped onions,GGP and cook for a minute.Then add chopped tomatoes, mix again.Add in red chilli powder,salt,turmeric powder and cook until tomatoes turns mushy. Add cooked urad dal,mix well and add water.. Add in coriander+cumin powders,garam masala, stir gently and cook for 10 minutes in low flame .Finally add cream,stir gently turn off after 5 minutes. serve hot dal with rice or chapathi.
