Garlic Fried Rice | Burnt Garlic Fried Rice Recipe | Arroz de Alho | Lunchbox Ideas | Fried Rice Recipes

Can you imagine cooking without ginger and garlic ?? Especially never ever a dish finishes without garlic and ginger in Indian cuisine.. We people used to make bulk quantity if ginger garlic paste where we add in all the types of curries,gravies and mostly in non vegetarian dishes..Both ginger and garlic have a strong flavor yet gives a strong taste to the dish i feel.So,I prefer these two lot in kitchen.

While thinking about leftover rice few garlic cloves forced me to try this rice.So,as per my taste used some sauces and tried this spicy one pot meal..Its simple to prepare,yet tastes so good when you serve hot..All you need is a some raita or even with that also it will be a good meal..Sautéeing the garlic till brown gives this rice preparation its unique flavour and using sauces reminds the chinese cuisine of course..So,a typical rice with indian chinese fusion..

2 tbsp finely chopped garlic (lehsun/alho)
2 cups cooked rice (fresh or left over)
3 tbsp oil
2 finely chopped green chillies
1/2 cup sliced spring onions whites
1/4 cup finely chopped spring onion greens
3/4 cup chopped and parboiled mixed vegetables
(french beans and carrots- i used only carrots)
1 tsp soy sauce
1 tsp red chili sauce
1 tsp vinegar
salt to taste

For The Garnish (optional)
2 tbsp finely chopped spring onion greens
1 tbsp fried garlic (lehsun/alho)
  1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a high flame for 2 minutes or till the garlic turns brown in colour.
  2. Add the green chillies and spring onion whites and sauté on a high flame for 1 minute.
  3. Add the spring onion greens and sauté on a high flame for 30 seconds.
  4. Add the mixed vegetables and sauté on a high flame for 1 minute.
  5. Add the soya sauce, vinegar, rice and salt, mix well and cook on a high flame for 2 minutes, while stirring occasionally.
  6. Serve hot garnished with spring onion greens and fried garlic.
