Chettinad Style Egg Curry | Chettinad Egg Masala Recipe | Egg Curry For Roti | Side dish for Chapathi

Egg gravies/curries are easy to cook at the same time nice sidedish to serve with chapathis.This is asimple gravy with fresh ground masala.Adjust the spiciness as per your taste.
I have already posted few different versions check out those recipe in the below.Try this and serve with chapathi or rice.

Eggs -5-6 (boiled in pressure cooker for 15 minutes)
Oil-2 table spoons
Onions-2 medium size
Ginger garlic paste-1 table spoon
Tomato-2 big size
Coriander leaves-handful
Red chili powder-2 tea spoons
Salt-to taste
Turmeric powder-1/2 tea spoon
Cumin powder-1/2 tea spoon
Corinader powder-1/2 tea spoon
Chettinad masala powder -1 tea spoon

For Chettinad masala powder
In a non stick pan dry roast 3 red chili,1 tea spoon cumin seeds, 1 tea spoon black pepper corns,1 javithri flower,1 staranise,4 cloves and 1 cardamom pod in low flame for few seconds.Then grind into fine powder and store in box..
Heat a non stick pan with oil,add finely chopped onions, ginger garlic paste and saute for 2 minute sin medium flame till onions turns brown in color.
Then add finely chopped tomatoes,stir gently and cook for 2minutes in low flame.
Add red chili powder,salt,turmeric powder,coriander powder, cumin powder,ground masala,stir gently.
Add 2 cups water,cook in medium flamefor 5 minutes with lid on top.Mean while,in another non stick pan,roast eggs in 1 table spoon oil.Add these eggs in gravy ,stir gently and turn off after 5 minutes.Add some freshly chopped coriander leaves and serve hot with chapathi or rice..
