celebrate Christmas Is in few days and many of my blogger friends are posting various x-mas recipes which are tempting me at the same time encouraging me to bake. Though I love this festival, this I`m going to share very few recipes that too, I have concentrated more on cookies.Hope I`ll post before the festival.rindu
Coming to this post, This is the Christmas cake which I have tried last year and kept it draft to post now. This is my very own recipe and loved the perfect result. rindu This cake is not spongy but tastes good, and can store in a refrigerator for a weel almost. I have used rum to soak dry fruits and nuts but you can replace it with any other alcohol. Check out version and try it soon.menari

Dry fruits and nuts-1 cup 
Rum (any brand) -1/3 cup (or 1/2 cup for strong flavor)

Dry ingredients 
All-purpose flour-2 cups
Baking powder- 1 teaspoon 
Baking soda- 1 teaspoon 
Cinnamon powder- 1 teaspoon 
Salt-- 1/2 teaspoon 
Dry Ginger powder-- 1 teaspoon 
Nutmeg powder- 1 teaspoon 
Sugar-1 cup
Wet ingredients
Eggs-2 no
Yogurt-1/2 cup
Oil-1/2 cup
In a mixing bowl take your favorite dry fruits and nuts, pour rum stir gently and let it rest overnight or 1-2 days if possible. 
In another bowl, sift dry ingredients like flour, baking powder, baking soda, cinnamon powder, salt, ginger powder, nutmeg powder. 
In a bowl, break eggs.To this add yogurt, oil, sugar and mix well everything. Now to this add dry ingredients mixture.
Then pour the soaked nuts mixture and stir gently.Take a cake tin, apply butter on all sides, dust with flour evenly. Pour this cake batter and tap tin on flour to avoid bubbles.
Preheat oven to 180 degrees C. After5 minutes place this tin and bake for 30 minutes.Check out with a toothpick, if it comes out clean then turn off otherwise bake for 10 more minutes.You can see the brown color on top which is significant that cake is done.Fruitcakes usually take longer time than the regular cakes. So, be patience and no need to worry. It may be done in around 45 minutes.

You can use unsalted butter instead of oil or even olive oil for fewer calories.
You can use wheat flour but cake may come out hard. So, add 1/3 cup more yogurt.
I made cake mix last year, in that I used almonds, walnuts, tutti frutti, golden+black raisins, dates. 
So, I used 1 cup mix from this homemade cake mix.
After baking, rest cake for 15 minutes and you can pour sugar syrup on top by making holes with a toothpick.
Wrap this cake in aluminum foil and refrigerate to keep the freshness.
