Baking cookies are little bit time taking and the butter quantity of cookies recipes always makes me take a step back. But butter is the main ingredient in cookies which gives a rich taste. These almond cookies are easy to make and tastes so good with a hot cup of milk.
There are so many versions to bake almond cookies but this version is simple and easy to try. Each oven is different in capacity so keep an eye on cookies after 15 minutes always. Egg-1 big size
Sugar-1 cup
Vanilla essence-1 teaspoon
Baking powder-1 teaspoon
Baking soda-1/2 teaspoon
Salt-1/2 teaspoon
All-purpose flour/ Maida/ White flour-2 1/2 cups
Almonds finely chopped-1 cup
Chopped almonds-1/4 cup
1.In a mixing bowl, take an egg, add sugar using hand beater beat for half a minute. Add in vanilla essence and mix with a spatula.
2.Now add baking powder, baking soda, salt and flour. mix with a spatula and beat for a minute on low speed.
3.Now add in finely chopped almonds (1 cup) and mix gently. Preheat an oven to 180-degree centigrade.
4.Line a parchment paper on a baking tray. Take a lemon size dough, roll in round shape, place on try and gently press on cookie dough to make it flat.
5.Sprinkle some more chopped almonds, press gently to stick in the cookie. Arrange cookies like this on tray and place in oven, bake for 15-20 minutes. 
6.Turn off and rest cookies on a wire rack. Each oven is different, so keep an eye after 15 minutes. I baked for 25 minutes.
