gobi aloo fry recipe | potato cauliflower fry recipe | vegetable stir-fry recipes | sabzi recipes fro chapati

Potato with cauliflower combination goes well either like curry, gravy or a stir-fry version.   Here is the simple version of stir-fry with aloo and gobi. This fry is simple to make, spicy in taste and tastes good with chapati or with curd rice.
Instead of oil, use ghee for rich taste black pepper powder for extra spice. Also, one more tip is, don`t use boiled gobi or potato to cook this fry, because boiled veggies make the fry mushy while you frying. Especially, Kids love this simple subji fry but adjust the spices. Try this and serve hot with roti or rice.

oil- 2 tablespoons
cumin seeds - 1 teaspoon
chana dal - 1 teaspoon
urad dal - 1 teaspoon
mustard seeds - 1 teaspoon
curry leaves-few
dry red chilli-1 
hing/Asafoetida - 2-3 pinches 
onions- 1 small size
ginger garlic paste - 1 teaspoon
potatoes-2 cups
cauliflower florets-2 cups
 red chilli powder - 1-2 teaspoons
turmeric powder - 1 teaspoon
garam masala - 1/2 teaspoon
coriander powder - 1 teaspoon
cumin powder - 1/2 teaspoon
Kasuri methi - 1 teaspoon
Coriander leaves-few
Heat a non-stick pan, add oil, when the oil is hot, throw in cumin seeds, chana dal, urad dal, mustard seeds, curry leaves, red chilli, hing and saute for a few seconds.
Then add finely chopped onions, ginger garlic paste, saute for 2 minutes in low heat flame. Then add finely chopped potatoes, cauliflower florets and stir well.
Add salt, stir once cook for 5 minutes in low heat with a lid. Then add red chilli powder, turmeric powder, mix well and cook for 5 minutes. stir in between otherwise may burn the veggies. To avoid burning, add some water on top of the lid.
When the veggies are soft, add garam masala, coriander powder, cumin powder, Kasuri methi and stir well. Cook for 5 more minutes and turn off. Add some freshly chopped coriander leaves and serve hot with chapati or rice.
