palak anda curry | spinach egg masala recipe | palak egg curry recipe | side dish for chapati

Palak and egg combination is one of the best combinations which I have felt. This is the super tasty which tried out recently for chapati in a simple method. I have posted a few spinach based gravy recipes which are a perfect combination for rotis.
Except grounding spinach into a puree the remaining process is quite easy, may need around 10-15 minutes to cook if the eggs are ready in hand. Try this spinach egg curry next time and serve hot with roti.

spinach puree -1 cup
oil- 3 tablespoon
cumin seeds- 1 teaspoon
bay leaf-1 no
javitri-1 small
cardamom-1 no

ginger garlic paste- 1 teaspoon
tomatoes2 big size
turmeric powder- 1/2 teaspoon
salt- 1 teaspoon
red chilli powder- 1 teaspoon
coriander powder- 1 teaspoon
garam masala- 1 teaspoon
Kasuri methi- 1 teaspoon
cream (creme de Leite)- 1/4 cup
Boil eggs for 15 minutes and keep aside. Wash and chop spinach finely. Boil spinach for 10 minutes in medium flame and grind into a fine paste.
Now heat a vessel, add oil, when the oil is hot, add cumin seeds, cloves, bay leaf, javitri, cardamom and saute for few seconds.
Then add finely chopped onions, ginger garlic paste, saute for 2 minutes in medium flame. Now add finely chopped tomatoes and mix well.
Now add turmeric powder, salt, red chilli powder, coriander powder, mix well and cook for 2 minutes again in a low heat.
Now add ground spinach puree, along with one cup of water and stir gently, after 2 minutes add boiled eggs (cut into half) stir once again and cook for 5 minutes.
Then add garam masala, Kasuri methi mix once. Finally, add cream, stir once and turn off.
