palak corn curry | spinach sweet corn curry recipe | corn spinach masala | palak corn recipe | side dish for roti

A few days back I have posted a spinach egg curry recipe which is a perfect dish to serve with chapati. Same like that recipe I tried this by replacing eggs with sweet corn. I use canned sweet corn always but if you are using fresh corn better boil later use in the dish.
Spinach with sweet corn turns out a very good combination either like a pulao or this kind of gravies. Try this simple and tasty gravy and serve hot with roti or chapati.

sweetcorn-1 cup
spinach puree -1 cup
oil- 3 tablespoon
cumin seeds- 1 teaspoon
bay leaf-1 no
javitri-1 small
cardamom-1 no
onions-1 medium size
ginger garlic paste- 1 teaspoon
tomatoes2 big size
turmeric powder- 1/2 teaspoon
salt- 1 teaspoon
red chilli powder- 1 teaspoon
coriander powder- 1 teaspoon
garam masala- 1 teaspoon
Kasuri methi- 1 teaspoon

cream (creme de Leite)- 1/4 cup
Boil eggs for 15 minutes and keep aside. Wash and chop spinach finely. Boil spinach for 10 minutes in medium flame and grind into a fine paste.
Now heat a vessel or non-stick pan, add oil, when the oil is hot, add cumin seeds, cloves, bay leaf, javitri, cardamom and saute for few seconds.
Then add finely chopped onions, ginger garlic paste, saute for 2 minutes in medium flame. Now add finely chopped tomatoes and mix well.
Now add turmeric powder, salt, red chilli powder, coriander powder, mix well and cook for 2 minutes again in a low heat.
Now add ground spinach puree, along with one cup of water and stir gently, after 2 minutes add sweetcorn stir once again and cook for 5 minutes.

Then add garam masala, Kasuri methi mix once. Finally, add cream, stir once and turn off. Serve hot with chapati.
