south indian style mutton curry with coconut | mutton gravy with tomato | pressure cooked mutton curry with coconut | mutton gravies

I have shared various mutton curry recipe till now and here is another recipe which is simple and tasty too. Coconut and tomato are the two main ingredients in this curry and pressure cooking mutton is easy if using meat with bone.
You can use dry coconut instead of a fresh but dry roast before grinding into a paste. If you have time marinate the mutton otherwise can add the spices directly while cooking. Use one more tomato for gravy texture and serve hot with rice or pulao or chapati.

HOW TO COOK
Wash mutton twice, take it in a bowl, add red chilli powder, salt, turmeric powder, coriander powder, cumin powder, garam masala, 1 teaspoon ginger garlic paste and mix well. Rest for 1-2 hours.
Meanwhile, in a mixie jar, take finely chopped tomatoes, fresh coconut pieces, cardamom pod, cinnamon stick, cloves, 1 teaspoon ginger garlic paste and grind into a fine puree.
Now heat a non-stick vessel, add oil, when the oil is hot, add red chilli, cumin seeds, cloves, cinnamon stick, cardamom pod and saute for few seconds.
Then add marinade mutton, stir well and cook for 15-20 minutes in low flame. Add the ground tomato masala puree, mix well and cook for 20 more minutes. Add 1-2 cups of water in between to avoid the meat burning.
Once the meat cooked perfectly, turn off, add some cilantro leaves and serve hot with rice or roti.
I have used boneless meat so cooked in the vessel if you are using meat with the bone it`s better to use a pressure cooker.
