BELL PEPPER RICOTTA CHEESE RICE/CAPSICUM PANEER RICE


This was the second try of mine..Unexpectedly one fine sunday I  tried this BELLPEPPER PANEER RICE according to my taste...And it was a great success..Rice tasted extremely hot with full of spices and super delicious bcz of paneer..On that day it was afternoon time and every one in home the was very hungry.
So, I skipped photo session and this time only because for photos I tried this again with little bit variation..But,Truly I votes my  first attempt..To  make it easy/to make my mind cool Iam writing the first attempt of rice version also..Go with first one if you are a true spice lover..Other wise just follow the today`s recipe....This one also tastes good.

FIRST ATTEMPT-SPICY VERSION

Heat pan with 2 tsps of oil and fry 1tsp black cumin,1 tsp fennel seeds,1 cardamom,3cloves and 1 sprig curry leaves.....Add 1 chopped onion and little bit of salt and cook til soft..Now add 1 big chopped capsicum and and mix well..Now to this add 1 tsp of red chilli powder,salt,turmeric,1 tsp garam masala,1/2 tsp coriander powder,1/2 tsp cumin powder and mix well..cook for 3 minutes in low flame the add boiled and drained 150 gms diced paneer and mix very carefully...After 1-2 minutes add left over rice and cook for 2 more minutes..Add cilantro chopped and serve very hot.....

WHAT YOU NEED

Fresh cooked white rice-11/2 cup
green bell pepper/capsicum-1 big
paneer/cottage cheese cubed-100gms
garam masala-1/2 tsp
salt- to taste
green chilli-4-5
turmeric-1/2 tsp

TO TEMPER
Oil-1 tsp
black cumin/shahejeera-1 tsp
cardamom pods opened-2
cloves-3
bay leaf-1 small


HOW TO MAKE

Heat heavy bottomed pan with oil then add INGS which given under TO TEMPER..

Saute for half minute then add chopped capsicum and mix well.


Add salt,chopped green chillies and cook for 1-2 minutes..Then add paneer and mix carefully....

Now throw in turmeric and mix til it coats to the pieces...Cook for 3 minutes..

Add rice and mix...Finally add garam masala and chopped cilantro if you have/like...

After cooking 2 minutes in low flame turn off and serve hot with any raita or gravy.
