Mutton Karahi is one of the popular cuisine around Pakistan which has an authentic taste. Peshawar is a heritage city so Peshawari Karhai is a bit different from normal Karahi. The most common ingredient that one would find in almost every Peshawari foods is dried  Fenugreek known as “sookhi methi“.
It is a herb that makes dishes more rich in flavor, enhance the taste of Karahi and give a appetizing smell to meal. Karahi is a simple yet delicious kind of fried meat with thick tomato gravy. Its great to prepare in dawats to enhance to tasty meal menu. Also great to make in lunch or in dinner. You can serve it with naan,tandoori roti and raita.

WHAT YOU NEED
mutton with bone- 300 grams
oil-2-3 table spoons
cumin seeds-1 tea spoon
green cardamom pods-3
bay leaf-1 big
staranise-1 small
cloves-3
cinnamon stick- 1" inch 
onions-2 medium size
ginger garlic paste-1 table spoon
tomatoes-2 medium size
red chili powder-1 table spoon
salt-to taste
turmeric powder - 1 tea spoon
curd-1/2 cup
coriander powder-1 tea spoon
cumin powder-1 tea spoon
kasoori methi-1 tea spoon
mutton masala-1 tea spoon
coriander leaves -few
HOW TO COOK
Heat thick bottomed vessel with oil.Throw cumin seeds,green cardamom pods,bay leaf,staranise, cloves, cinnamon stick.Saute for few seconds.. 

Add finely chopped onions,ginger garlic paste, Cook for a minute in medium flame until onions turns soft..Then add marinated mutton,chopped tomatoes,mix well..Add in red chili powder, salt, turmeric powder,curd mix well..Cook for 15 minutes in medium flame with lid.

Then add coriander powder,cumin powder, mutton masala, kasoori methi,2 cups of water, mix well and cook for 30 minutes again in low flame with lid.

Stir in between to avoid burning.. Check out the mutton piece is cooked well or notadd coriander leaves and turn off..Depending on the mutton piece size and quality adjust the time.For me it took almost 40 minutes.
