Mysore Style Tomato Rice Recipe | How to Make Masala Tomato Rice | One Pot Meals | Kids Lunch Box Ideas | Rice Recipes For Lunch

Tomato rice is a simple and spicy rice which is perfect for lunch or lunch box..But mysore style is different because of fresh and aromatic ground masala.You can use left over rice to make this rice but I added freshly cooked steaming rice.So,can send it in lunch box along with curd..
Because of red chillies rice tastes hot but tomatoes gives balances the tastes with their sweet and sour taste.try out the recipe and let me know how it turned out for you.

WHAT YOU NEED
For Masala Powder
 cumin seeds-1 tea spoon
dhaniya seeds-1 tea spoon
cashews5
coconut pieces-1/4 cup
red chillies-5
cloves-3
{Use 1 table spoon of masala and store the remaining}
To Cook Rice
oil-2 table spoon
 mustard seeds-1 tea spoon
onion-1 small
ginger garlic paste-1 tea spoon
 tomatoes-2 big
salt-to taste
  turmeric powder-1/2 tea spoon
white rice-2 cups (fresh or left over)
HOW TO COOK
In a pan dry roast cumin seeds,dhaniya seeds,cashews,coconut pieces,red chillies, cloves for few seconds and grind into fine powder,keep aside.Now heat a non stick pan with oil,throw mustard seeds,chopped onions,ginger garlic paste and saute for a minute.Then add finely chopped tomatoes,salt and mix well.Cook for a minute and add turmeric powder,ground masala powder and stir gently.Cook for 2 more minute until tomatoes turns mushy and add rice.Stir gently, cook for a minute and turn off.Serve hot with raita and papad.
